Chef Walter Romero González, originally from Huacho, Peru, is a celebrated culinary artist with over 20 years of international experience in prestigious restaurants across Ecuador, Argentina, Chile, and Peru. His extensive career has refined his expertise in diverse culinary techniques, all while preserving the authentic flavors and traditions of Peruvian cuisine.
Now based in Boston, Chef Romero is a passionate advocate for Peru’s rich gastronomic heritage and a master of the iconic ceviche. As a driving force behind Ceviche Day, he invites the Boston community to experience the vibrant flavors, artistry, and cultural significance of this beloved Peruvian dish.

Caty Salgado is a visionary Peruvian American entrepreneur and designer, with over 25 years of experience in the United States. As the creative force behind Lanallama, Caty has been instrumental in bringing the vibrant culture of Peru to the USA, showcasing the beauty and craftsmanship of alpaca products and Andean crafts.
In her latest venture as a business developer, Caty is excited to co-found the inaugural Ceviche Day event in Boston. She brings her extensive knowledge in marketing and design to highlight Peru's flagship dish, ceviche, fostering a deeper appreciation for Peruvian culinary traditions. Her dedication to cultural celebration and sustainability is evident in all her endeavors, making her a prominent figure in promoting Peruvian heritage and innovation in the United States.

Jose Davila is a vital part of the founding team behind Ceviche Day in Boston, bringing his extensive culinary expertise and leadership to this exciting celebration of ceviche. With over 20 years of experience as an Executive Chef, including his recent tenure at the acclaimed Surf Seafood Restaurant, Jose has a proven track record of delivering exceptional dining experiences and mastering the art of seafood preparation.
As part of a collaborative group of founders, Jose contributes his unique skills in resource management, food and beverage pairing, and team leadership to ensure the event’s success. His passion for culinary excellence and dedication to teamwork make him an irreplaceable piece of the Ceviche Day vision.
Ceviche Day in Boston is a first-of-its-kind event, celebrating the vibrant flavors and cultural significance of ceviche, an iconic dish with UNESCO recognition. Jose’s expertise will help make this inaugural event a memorable experience for all aendees, showcasing the artistry and flavor that make ceviche a true culinary treasure.
